Recipes from fermented Items.(Saving food from being thrown).

Lets save the food from wastages,
so giving you some of the menus that can be home made with the
ingredients already available at your home & never given in any cookery books
:-)
like when you find the kneaded flour remaining out of the Chapatis made last
night & you find it has started fermenting.........
what do you do?
of course you will look for a dustbin to throw it but remember that many items
from some of your favorite menus like Idli , Dosa are also made after
fermenting the ingredients eg rice, dal etc.

So than do think before throwing the fermented flour that you can also have so
many items made out of it,
But now i can share 1 of the recipe that we can make out of it (thought up by me)
thats named as "Malpova" prepared in my own way

first put the fermented kneaded flour in the mixer add some water to it in the measurement

of 1 bowl of kneaded flour + 1/2 cup water,
to make your mix sweet add 1/2 bowl Sugar or Jaggery to it( i prefer sugar).

Run the mixer till your ingredients forms into thick (batter) paste like (just like you
prepare it for cake), to have some flavor to it you can also add 1/2 tbsp cardamom powder
& dry fruits mix once the paste is ready.

Now you put Ghee or Dalda on a pan to heat & with the help of spoon (used for serving gravy) take the
mixture & spread it on the pan in round shape (like utappam)
bake it properly from both sides & then once it turns light brown color also
check that its not sticky ,
then remove from the pan & put it on Tissue paper to have all excess Ghee or
Dalda soaked from it & ready to be served.

So,before you throw any food items think twice on about experimenting some new tasty items that can be made out of it.

I can bring the dish for the demo only when the kneaded flour in the refrigerator gets fermented sometime ;-).

Jackfruit Balls

Ingredients :
Boiled Rice : 1/4 Kg.
Jaggery : 150 gms.
Jackfruit pieces : 10 to 12 pieces
Coconut : 1/4 scraped
Salt to taste
Oil for frying

Method :
Soak Rice for 6 hrs. Grind rice to coarse. (not very fine). Grind scraped jaggery along with jackfruit pieces. Mix the ingredients well with scraped coconut & salt to taste. Make small balls & deep fry in oil till golden color. Serve hot with tea.

& for those who are oil conscious, instead of frying in oil, pour the batter into the plate & steam it. Cut into pieces & serve.

Sweet Idlis (made of jackfruit)

Ingredients :
Boiled Rice : 1/2 Kg.
Kacha Rice : 1/4 Kg.
Udit Dal : 1/4 Kg.
Jaggery : 1/4 Kg. or less according to your taste
Jackfruit : 15 to 20 pieces
Salt to taste

Method :
Soak Rice & Dal for 6 - 8 hrs. Grind soaked ingredients separately to fine paste. Grind scraped jaggery along with jackfruit pieces till fine & mix all the ingredients well with salt to taste. Keep the batter for fermentation (it will take atleast 8-10 hrs.) After the batter is fermented, pour the batter in idli container & keep it for 15-20 minutes steaming.
Serve hot with tea.

do ensure bread is still thick that can be hold in hands & rounded in Gulab Jamun Shapes,

than on other hand make Ghee or Dalda to to melt in pan & when its hot ,deep fry the bread rolls till it turns light brown color.

Now, take 2 cups water & add 1/2 bowl sugar to it & keep it on slow flame to get mix well that forms into sweet sticky form called (chasni).

once you finish frying brea! d rolls take them out & add them to the chasni.

Wait for some time till bread rolls get soft when soak in chasni & ready to be served.

Recipe to make Samandhi (Chatni) that i bring with IDLI

Hello Friends,

Materials required: Mirch powder,Onion, Garlic,Kaddipatha,Rai, Salt & Oil

Let me start with step by step:

Take 4-5 pieces of Onion and 4-7 pieces of Garlic (Lasoon). Cut pieces of onion and fry it in PAN with little bit of oil for 2-3 minutes with 2 1/2 spoon of mirch powder (include garlic also for frying). After frying, collect all the things and put in into a mixer and grind it for 2-3 minutes. While putting into MIXER do include (Kaddiptatha & Salt - how much we want). Collect it in a bowl.

After finishing we should give PHODNI (a marathi word). For PHODNI take some oil and RAI (for rai i don't know the english word) and just fry it for 10-15 seconds and put in the Samandhi (Chatni) and mix it. Your dish is ready.

Try it at home and bring the same.

Recipe

Since everyone is so much into recipes heres one from me. One of the easiest things to cook would take approximately 15 - 20 minutes. Fast and easy are two words all guys would understand when it comes to cooking,.
People usually give their recipes a name i prefer to call it .. santosh's gujrati dal ;)

Ingredients:
1/2 cup Tuar Dal
1 green chilli
half a teaspoon of Hing
1 teaspoon ginger garlic paste
1 tea spoon haldi
1/4 tea spoon jeera
1/4 tea spoon rai
salt to taste
And offcourse u need oil.
1 teaspoon Gul -- i have no clue whts gul called in angrezi

method:
There two basic ways to cook dal, first could be to boil it a pan which would take 15 - 30 minutes . second is the pressure cooker way which would take 2 whistles approx 5 - 10 minutes.
God bless the person who invented pressure cooker. I must say its one of the most valuable inventions ever in the history of man.

Take some oil in a pan. add hing jeera rai and haldi count till 30 mostly by then u should start feeling the burns of oil on ur hand. Add ginger garlic paste and green chillies let it cook for 30 more seconds .. by the second minute of this cooking session u will have everyone in house coughing their lives out. Add the dal from the pressure cooker, then a little bit of salt as per taste. Then comes the gul and let it cook for say 5 - 10 minutes. See to it that you keep stirring else the gul will form lumps. Garnish with coriander. ITs best served hot with rice and pickle. Now if u have mother or wife at home get them to make some papads and let the food roll down ur stomach. ;)
